Fruity Loops is a favourite, though useless if you want to change tempo midway through a track.
The Drum Kit From Hell programs are supposed to be the dogs bollocks if you don't mind stealing it off the interweb, though I get the impression it might be rather complex to use.
I use a shit cheap Zoom drum machine which is a pain in the arse to program.

Out of interest, what software do you use to record your guitar/bass once you've jacked into your laptop? I'm interested in recording a couple of riffs of my own.
